Immune Boosting- Cold Chaser - Prep Time: 3 minutes

Ingredients:  elderflowers, lime–tree blossoms, Thyme, aniseed, fennel, rose-hip peel  liquorice root, blackberry leaves, wild thyme. To PREPAIR: Add 5 cups water in a pan, once water is boiling add fresh ginger strips to water, reduce heat to simmer for 15 minutes. Strain ingredients from liquid and drink. Assam Tea is one of my favorite teas – I really like this TEA and hope you do too?

Seasons in Assam The annual tea season in Assam begins in April. Also known as the first flush season, the teas produced have a characteristic lightness in flavor and crispness in texture. However, the second flush (May - June) season, produces the highly sought after Assam black teas that are more robust and with a lot of tippy, malty and full-bodied character.

Bold black tea from the Assam region of India. Assam tea is known for a deep, burgundy-red cup and pungent flavor. Our Assam Melody is perfect for tea drinkers who may be new to the powerful character of Assam. Rich aroma, more sweet starchy than malty, like roasted plantains. Rounded mouthfeel, malty without being overpowering. Slight notes of raisin. Brisk astringency and not extremely pungent. A solid, 'friendly' Assam, from the well-regarded Meleng Estate.

We recommend using higher temperature water, close to or just before boiling (190 - 200 F), with a proportion of one teaspoon of leaf per 8oz of water. Some recommend water at a full, rolling boil, but in our opinion boiling reduces the oxygen content in good water and gives the tea a flatter taste as opposed to a livelier taste from slightly cooler water. Steeping time can vary depending on whether you wish to drink with milk or without (Assams take milk very well and are often served with a bit of whole milk). To drink without milk, 3 ½ to 4 ½ minutes is plenty of time to bring out a well balanced sweetness and astringency. With milk, a slightly longer time is required, 5 to 6 minutes, to acquire enough astringency to balance the milk -
